Vegetable soup with carrot is a delicious and healthy soup that is perfect for a quick and easy meal.

Method
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic to the pot and sauté for 5 minutes, or until the onion is softened.
- Add the chopped carrots, tomatoes, vegetable broth, thyme, and black pepper to the pot. Stir to combine.
- Bring the soup to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the carrots are tender.
