  • 1 tablespoon olive oil
  • 400g lean turkey mince
  • 3 teaspoons Thai seasoning (no added salt)
  • 4 pak choi heads
  • 160g carrots (shredded)

  • 2 tablespoons olive oil
  • 800g lean turkey mince
  • 6 teaspoons Thai seasoning (no added salt)
  • 8 pak choi heads
  • 320g carrots (shredded)

  • 720g basmati rice
  • 3 tablespoons olive oil
  • 1200g lean turkey mince
  • 9 teaspoons Thai seasoning (no added salt)
  • 12 pak choi heads
  • 480g carrots (shredded)
  • Method

  • Cook rice in a large pan with 600ml water. Simmer for 12 minutes, then steam off heat.
  • In a frying pan, heat oil over high heat, and cook turkey mince for 5 minutes. Drain fat, mix in Thai seasoning, and cook for 2 more minutes.
  • Add 200ml boiling water, cover, and simmer for 10 minutes.
  • Add chopped pak choi white parts and carrots to the pan, and cook for 2 minutes.
  • Add pak choi greens and cook until wilted.
  • Serve turkey mix over rice.
