Tabbouleh
Tabbouleh is a delicious and refreshing Middle Eastern salad that is typically made with parsley, tomatoes, onions, and bulgur wheat. It is a healthy and flavorful dish that is perfect for a summer meal or as a side dish.

- 1/2 cup fine bulgur wheat
- 1 cup chopped fresh parsley
- 1/2 cup of fresh mint
- 1/2 cup chopped tomatoes
- 1/4 cup chopped onion
- 1 garlic cloves
- 1/4 cucumber
- 1/8 cup lemon juice
- 1/8 cup olive oil
- 1/8 teaspoon black pepper

- 1 1/2 cup fine bulgur wheat
- 3 cups chopped fresh parsley
- 1 1/2 cup of fresh mint
- 1 1/2 cup chopped tomatoes
- 3/4 cup chopped onion
- 3 garlic cloves
- 3/4 cucumber
- 1/2 cup lemon juice
- 1/2 cup olive oil
- 1/2 teaspoon black pepper
Method
- In a medium bowl, combine the bulgur wheat with 1 cup of cold water. Let it soak for at least 30 minutes, or until the bulgur has softened.
- Dice the tomatoes and cucumbers into very small pieces
- With a blender, blend separately the onion, parsley, mint, and garlic
- In a large mixing bowl, combine the diced tomatoes and cucumbers with the blended onion, parsley, mint, and garlic and the lemon juice, olive oil, and black pepper.
- Drain the bulgur wheat and add it to the bowl with the parsley mixture. Stir to combine.
- Cover the bowl and refrigerate the tabbouleh for at least 30 minutes to allow the flavors to develop.
- Serve the tabbouleh cold or at room temperature, garnished with additional herbs if desired. Enjoy!
