  • 1/2 cup fine bulgur wheat

  • 1 1/2 cup fine bulgur wheat
  • 3 cups chopped fresh parsley
  • 1 1/2 cup of fresh mint
  • 1 1/2 cup chopped tomatoes
  • 3/4 cup chopped onion
  • 3 garlic cloves
  • 3/4 cucumber
  • 1/2 cup lemon juice
  • 1/2 cup olive oil
  • 1/2 teaspoon black pepper

Method

  1. In a medium bowl, combine the bulgur wheat with 1 cup of cold water. Let it soak for at least 30 minutes, or until the bulgur has softened.
  2. Dice the tomatoes and cucumbers into very small pieces
  3. With a blender, blend separately the onion, parsley, mint, and garlic
  4. In a large mixing bowl, combine the diced tomatoes and cucumbers with the blended onion, parsley, mint, and garlic and the lemon juice, olive oil, and black pepper.
  5. Drain the bulgur wheat and add it to the bowl with the parsley mixture. Stir to combine.
  6. Cover the bowl and refrigerate the tabbouleh for at least 30 minutes to allow the flavors to develop.
  7. Serve the tabbouleh cold or at room temperature, garnished with additional herbs if desired. Enjoy!
