- 1/2 large eggplant/aubergine, sliced into 1/2-inch rounds
- 1/2 tablespoon olive oil
- 1/2 cup cooked bulgur
- 1/2 onion, caramelized
- 1/2 cup chopped kale
- 1/4 cup chopped fresh parsley
Szechuan sauce
- 1/2 teaspoon of Honey
- Garlic powder
- Chilli Powder
- 3 grams (0.1 oz) of fresh-cut ginger

- 1 1/2 cup chopped kale

Method
- In a large frying pan, heat the vegetable oil over medium-high heat.
- Add the eggplant slices to the pan and fry them for 3-4 minutes on each side, or until they are tender and lightly browned.
- In a bowl add all the ingredients for the Szechuan sauce to make a paste
- Add the Szechuan sauce to the pan and stir to coat the eggplant slices with the sauce.
- Add the cooked bulgur, caramelized onion, and kale to the pan and stir to combine.
- Cook the mixture for an additional 2-3 minutes, or until the kale is wilted and the ingredients are heated through.
- Serve the Szechuan aubergine with bulgur, caramelized onion, kale, and fresh parsley hot, garnished with additional parsley if desired. Enjoy!
