  • 1/2 teaspoon of Honey
  • Garlic powder
  • Chilli Powder
  • 3 grams  (0.1 oz) of fresh-cut ginger

  • 5 grams (0.2 oz) of fresh-cut ginger

  • 1 1/2 large eggplant/aubergine, sliced into 1/2-inch rounds
  • 1 1/2 tablespoon olive oil
  • 1 1/2 cup cooked bulgur
  • 1 1/2 onion, caramelized
  • 1 1/2 cup chopped kale
  • 1/2 cup chopped fresh parsley

Szechuan sauce

  • 10 grams (0.3 oz) of fresh-cut ginger

Method

  1. In a large frying pan, heat the vegetable oil over medium-high heat.
  2. Add the eggplant slices to the pan and fry them for 3-4 minutes on each side, or until they are tender and lightly browned.
  3. In a bowl add all the ingredients for the Szechuan sauce to make a paste
  4. Add the Szechuan sauce to the pan and stir to coat the eggplant slices with the sauce.
  5. Add the cooked bulgur, caramelized onion, and kale to the pan and stir to combine.
  6. Cook the mixture for an additional 2-3 minutes, or until the kale is wilted and the ingredients are heated through.
  7. Serve the Szechuan aubergine with bulgur, caramelized onion, kale, and fresh parsley hot, garnished with additional parsley if desired. Enjoy!
