Seafood Paella

- 1 tablespoon olive oil
- 1/2 onion, diced
- 1/2 red bell pepper, diced
- 1/2 cup Arborio rice
- 1/2 teaspoon saffron threads

- 1 cup of low-salt vegetable broth (using low-salt stock cubes)
- 1/4 cup peas
- 1/4 cup diced tomatoes
- 60 grams (2.1 ounces) of fresh prawns

- 3 tablespoon olive oil
- 1 1/2 onion, diced
- 1 1/2 red bell pepper, diced
- 1 1/2 cup Arborio rice
- 1 1/2 teaspoon saffron threads
- 3/4 cup dry white wine
- 3 cups of low-salt vegetable broth (using low-salt stock cubes)
- 3/4 cup peas
- 3/4 cup diced tomatoes
- 180 grams (6.4 ounces) of fresh prawns
- 3/4 cup chopped fresh parsley
Method
- Heat the olive oil in a large, shallow pan over medium heat.
- Add the onion and bell pepper to the pan and sauté for 5 minutes, or until the onion is softened.
- Add the rice to the pan and stir to coat it with the oil. Cook the rice for 1-2 minutes, or until it is lightly toasted.
- Add the saffron threads and white wine to the pan and stir to combine.
- Add the vegetable broth, peas, and tomatoes to the pan and stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the rice is cooked through and the liquid has been absorbed.
- Add the seafood to the pan and stir to combine. Cook for an additional 5-10 minutes, or until the seafood is cooked through.
- Serve the paella hot, garnished with chopped parsley and a lemon wedge if desired. Enjoy!
