  • 1 1/2 onion, diced

  • 180 grams (6.4 ounces) of fresh prawns

Method

  1. Heat the olive oil in a large, shallow pan over medium heat.
  2. Add the onion and bell pepper to the pan and sauté for 5 minutes, or until the onion is softened.
  3. Add the rice to the pan and stir to coat it with the oil. Cook the rice for 1-2 minutes, or until it is lightly toasted.
  4. Add the saffron threads and white wine to the pan and stir to combine.
  5. Add the vegetable broth, peas, and tomatoes to the pan and stir to combine.
  6. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the rice is cooked through and the liquid has been absorbed.
  7. Add the seafood to the pan and stir to combine. Cook for an additional 5-10 minutes, or until the seafood is cooked through.
  8. Serve the paella hot, garnished with chopped parsley and a lemon wedge if desired. Enjoy!
