Method
- Preheat your oven to 400°F (200°C).
- Wash and cut the vegetables into bite-sized pieces (to reduce potassium boil the veggies first before moving to step 4)
- In a small bowl, whisk together olive oil, dried herbs, garlic powder, and salt substitute (if using). Add the vegetables and toss until they are evenly coated.
- Spread the vegetables out on a small baking sheet lined with parchment paper, making sure they are not too crowded.
- Roast the vegetables in the oven for 15-20 minutes, stirring once or twice during cooking, until they are tender and lightly browned.
- Remove the baking sheet from the oven and let the vegetables cool for a few minutes before serving.
