Marinated roasted peppers are a delicious and easy appetizer or side dish.

- 1 red bell pepper/capsicum
- 1 yellow bell pepper/capsicum
- 1 tablespoon olive oil
- 1/2 clove garlic, minced
- 1/8 teaspoon black pepper
- 1 tablespoon red wine vinegar

Method
- Preheat the oven to 400 degrees F.
- Cut the bell peppers into thin strips and place them on a baking sheet.
- Drizzle the peppers with the olive oil and sprinkle with the garlic, salt, and black pepper.
- Roast the peppers in the oven for 15-20 minutes, or until they are slightly charred and tender.
- In a small mixing bowl, combine the roasted peppers with the red wine vinegar. Stir to coat the peppers evenly with the vinegar.
- Cover the bowl and refrigerate the peppers for at least 1 hour to allow the flavors to develop.
- Serve the marinated roasted peppers as an appetizer or side dish, garnished with additional herbs if desired. Enjoy!
