- 1 red bell pepper (capsicum) roasted and peeled
- 1/8 cup olive oil
- 1/4 cup chopped fresh parsley

- 2 red bell peppers, roasted and peeled

Method
- In a blender or food processor, combine the roasted red bell peppers, olive oil, parsley, garlic, and black pepper. Blend until the sauce is smooth and well combined.
- In a large pot of boiling water, cook the linguine according to the package instructions.
- Drain the pasta and return it to the pot.
- Pour the red pepper sauce over the pasta and toss to coat.
