Vegan hotdogs
Vegan hotdogs are a delicious and healthy alternative to traditional hotdogs. They are made with carrots that are sliced and shaped to resemble hotdogs.
Ingredients

- 2 large carrots, peeled and sliced lengthwise into "hotdog" shapes
- 1/8 cup water
- 1 tablespoon low-salt soy sauce
- 1/2 tablespoon honey
- 1/2 tablespoon apple cider vinegar
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/8 teaspoon smoked paprika
- 2 hotdog buns
- Optional - Condiments of your choice (ketchup, mustard, relish, etc.)

- 1/2 cup water
- 3 tablespoons low-salt soy sauce
- 1 1/2 tablespoon honey
- 1 1/2 tablespoon apple cider vinegar
- 3/4 teaspoon garlic powder
- 3/4 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 6 hotdog buns
- Optional - Condiments of your choice (ketchup, mustard, relish, etc.)
Method
- In a small saucepan, combine the water, low-salt soy sauce, honey, apple cider vinegar, garlic powder, onion powder, and smoked paprika. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 5 minutes.
- Place the sliced carrots in a shallow dish and pour the marinade over the top. Marinate the carrots for at least 30 minutes, or up to 24 hours.
- Preheat the oven to 400 degrees F.
- Place the marinated carrots on a baking sheet and bake for 20-25 minutes, or until the carrots are tender and slightly caramelized.
- Toast the hotdog buns, if desired.
- Assemble the carrot hotdogs by placing the cooked carrots on the buns and topping with your favorite condiments. Serve immediately and enjoy!
