Carrot and ginger soup
Carrot and ginger soup is a delicious and healthy soup that is perfect for a quick and easy meal.
Ingredients

- 1 tablespoon olive oil
- 1/2 onion, diced
- 1 cloves garlic, minced
- 1/2 tablespoon grated fresh ginger
- 2 cups chopped carrots
- 1/2 low-salt stock cube making 2 cups low-salt vegetable broth (make sure you use low-salt stock cubes otherwise this will be very high in salt)
- 1/4 teaspoon black pepper

- 1 1/2 onion, diced
- 3 cloves garlic, minced
- 1 1/2 tablespoons grated fresh ginger
- 6 cups chopped carrots
- 1 1/2 low-salt stock cube making 6 cups low-salt vegetable broth (make sure you use low-salt stock cubes otherwise this will be very high in salt)
- 1/4 teaspoon black pepper
Method
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, and ginger to the pot and sauté for 5 minutes, or until the onion is softened.
- Boil a pot of water, then add carrots until soft. Remove the water and separate the carrots to lower the potassium of the carrots.
- Chop the carrots then add the carrots, low-salt vegetable broth, and black pepper to the pot. Stir to combine.
- Bring the soup to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the carrots are tender.
- Use an immersion blender to blend the soup until it is smooth and creamy. Alternatively, you can transfer the soup to a blender and blend it in batches, being careful not to overfill the blender.
- Serve the carrot and ginger soup hot, garnished with additional herbs or a side of wholemeal bread if desired. Enjoy!
