Ingredients

  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 1 cloves garlic, minced
  • 1/2 tablespoon grated fresh ginger
  • 2 cups chopped carrots
  • 1/2 low-salt stock cube making 2 cups low-salt vegetable broth (make sure you use low-salt stock cubes otherwise this will be very high in salt)
  • 1/4 teaspoon black pepper

  • 1 1/2 onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 tablespoons grated fresh ginger
  • 6 cups chopped carrots
  • 1 1/2 low-salt stock cube making 6 cups low-salt vegetable broth (make sure you use low-salt stock cubes otherwise this will be very high in salt)
  • 1/4 teaspoon black pepper

Method

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, and ginger to the pot and sauté for 5 minutes, or until the onion is softened.
  3. Boil a pot of water, then add carrots until soft. Remove the water and separate the carrots to lower the potassium of the carrots.
  4. Chop the carrots then add the carrots, low-salt vegetable broth, and black pepper to the pot. Stir to combine.
  5. Bring the soup to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the carrots are tender.
  6. Use an immersion blender to blend the soup until it is smooth and creamy. Alternatively, you can transfer the soup to a blender and blend it in batches, being careful not to overfill the blender.
  7. Serve the carrot and ginger soup hot, garnished with additional herbs or a side of wholemeal bread if desired. Enjoy!
