Method
- In a skillet, cook the potatoes over medium heat until they are tender and lightly browned. Remove the potatoes from the skillet and set them aside.
- In a separate skillet, cook the eggs over medium heat until they are scrambled.
- Warm the tortillas in the microwave or on the stovetop until they are pliable.
- Assemble the burritos by placing a tortilla on a flat surface and adding a layer of eggs, potatoes, cheese, and low-salt sauce. Roll up the burrito and secure it with a toothpick. Repeat with the remaining tortillas.
- Serve the burritos with a side of diced avocado and enjoy!
