
Apple Spice Muffins
Easy apple spice muffins with cinnamon and nutmeg, made with whole wheat flour and applesauce. A kidney-friendly breakfast or snack for a renal diet.

- 1/3 cup whole wheat flour
- 1/4 tsp baking powder
- 1/4 tsp cinnamon
- Pinch of nutmeg
- 1 tbsp unsweetened applesauce
- 1 tbsp brown sugar substitute
- 1 egg white
- 1/4 apple, grated
- 1 tsp low-fat milk

Method
- Preheat the oven to 350°F (175°C).
- Line a muffin tin with paper liners.
- In a bowl, combine flour, baking powder, cinnamon, and nutmeg.
- In another bowl, whisk together applesauce, brown sugar substitute, egg white, and milk.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in grated apple.
- Divide the batter among the muffin cups.
- Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
