
Apple Spice Cake
Kidney-friendly apple spice cake made with whole wheat flour, applesauce and warm cinnamon. A lighter single-serve bake for a CKD-friendly dessert.

- 1/3 cup whole wheat flour
- 1/4 tsp baking soda
- 1/4 tsp cinnamon
- Pinch of nutmeg
- 1 tbsp unsweetened applesauce
- 1 tbsp brown sugar substitute
- 1 egg white
- 1/4 apple, grated
- 1 tsp low-fat milk

- 3/4 apple, grated
- 1 tbsp low-fat milk
Method
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, baking soda, cinnamon, and nutmeg.
- In another bowl, whisk together applesauce, brown sugar substitute, egg white, and milk.
- Combine the wet and dry ingredients.
- Fold in grated apple.
- Pour the batter into a greased loaf pan.
- Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
