Apple rice salad with brown rice, celery, raisins and walnuts in a lemon dressing. A fresh, low-salt lunch or side for a kidney-friendly diet.

- 1/2 cup cooked brown rice, cooled
- 1/2 apple, diced
- 1 tbsp chopped celery
- 1 tbsp raisins
- 1 tbsp chopped walnuts
- 1 tsp olive oil
- 1 tsp lemon juice
- Pinch of black pepper

Method
- In a bowl, combine cooked brown rice, diced apple, celery, raisins, and walnuts.
- In a small bowl, whisk together olive oil, lemon juice, and black pepper.
- Pour the dressing over the rice mixture and toss to combine.
- Serve chilled or at room temperature.
